One of my favourite parts about Christmas is all the amazing cooking. And while I’m inspired to try something new every year, there are still family favourites that I make every time. And it’s the classic turkey and stuffing.
I’ve been playing with the recipes the last few years and am now in love with dry brining. It’s a little more prep, as you have to start the turkey at least 12 hours before you want to cook it, but it’s really quite easy and makes for a moist turkey, and crispy skin.
And our stuffing has a little bit of everything: bread crumbs, sausage, celery, mushrooms, onions, spices (I’ve even sneaked in walnuts, apples and cranberries one year).
Even my son and husband get in on the cooking. Even if sometimes they’re just there to ‘quality control.’ But their help is definitely appreciated when it comes to chopping up all those onions, or mashing the sweet potatoes.
