My favourite Greek Village Salad

My favourite meals are often the simplest ones to prepare. Good food doesn’t need to be complicated or take a long time to prepare. All you need to do is remember that you should try to make food that tastes good, but that is also good for you.

This Greek village salad is a staple in my family. We don’t do lettuce in our Greek salads, I’m not judging, I’m just sayin’. It has four ingredients, and what you add later is up to you.

I started with cucumbers, tomatoes and basil from my garden. I included an onion that I purchased. There is no need to grow your own to enjoy this type of food. Go to your local farmers market or grocery store. Their summer produce is equally impressive this time of the year.

Then all I do is chop it up to get this.

Then you can add this. I like Feta cheese and Olives. I serve them on the side, so we can choose what we like. For a long time, my son didn’t like olives, but now he’s into them. I let him decide how many he wants.

For the dressing, I like to use olive oil, salt and pepper. But I also often include some dried or fresh oregano, balsamic vinegar and lemon. There is no pre-mixing, I just shake over top, and then mix in.

Voila…simple, delicious Greek village salad. All you need now is a nice loaf of bread or warmed pitas.
