Still searching for a good holiday food veg option

recipie-book-photoI love eating vegetables, and am not usually a fan of the faux vegetarian items.  But at thanksgiving and Christmas, I feel like I’m missing out. I want to have something decadent, special, something that I don’t have often.  I’ve tried the fake tofu turkey product, but haven’t been impressed.  I have spent time trying to fabricate my own faux tofu something.  Last year I tried a tofu/nut loaf (tip…don’t interchange nuts in these recipes…the results are not always great). Even the packaged vegan brown sauce doesn’t quite have the flavor I’m looking for.  I don’t have the answers, but I do know that I’m still looking for something special that I can make that even, ok, maybe this is asking too much, everyone else will enjoy as well.  I haven’t found what I’m looking for, but I know, each year, I try again.  Who knows, maybe this will be the year I find my special vegetarian surprise.

    I realize that this is too late for this year, but I made a very decadent risotto to serve for Christmas dinner, for myself and 2 other vegetarians at our dinner. It was devoured by all!
