Turkey a la King

I was trying to figure out what to do with leftover turkey.  After serving it for dinner two nights in a row, and making and freezing turkey rice soup, I was running out of ideas.  I was surprised to come home one evening to learn that the boys had eaten more leftovers.  Who knew retro recipes would appeal to our son?  My husband who grew up in a family well acquainted with Betty Crocker and Jell-O, had a memory of turkey a la king, which is really a fancy name for turkey mixed with a can of cream of mushroom soup and frozen peas spooned onto toast.  Keeping a can of Campbell’s soup in the cupboard can be a good thing.
