Homemade soup with a helping hand from #CampbellsSoup

Soup is a staple food in my house. I try to make sure that we eat soup several times a week. Soup portable, travels well and freezes well. It goes well with other things, like crackers, sandwiches and cheese, and with a crusty loaf of bread and salad, makes a great, quick, healthy dinner.

But sometimes I don’t have time for making it from scratch.

As you can see, my family digs their soup. My DH love the classic (and more and more hard to find) tomato and rice, while my son loves the clam chowder.

But as much as I do open a can of soup when we need a quick meal, there is nothing that compares to the smell of soup simmering on the stove.

When you don’t have a lot of time, but want to get a homemade meal on the table, you might want to try Campbell’s Soup kits.

They are easy, flavourful, and the kit I used included items that are common household staples.  Here is how easy it was.

I only needed 6 things.  the Campbells Soup kit (Thai Chicken and Rice), Box of Campbell Chicken Broth, 2/3 cup of coconut milk, chicken breast,  1/2 package of mushrooms and a lime.

Inside the kit is a flavour packet and the dry ingredients

My son helped chop the mushrooms and juice the lime.

I cut the chicken – this is my interpretation of strips!  You may wish to do your smaller or larger! I find that freezing the breast for a 1/2 hour makes it easier to cut the pieces.

Then just dump it into the pot!

And don’t forget the coconut milk!

That’s it – and you only need to cook for about 20 minutes!  Just to ensure the chicken is cooked!  Once it is cooked, make sure to include the lime juice.  It really makes a difference to the flavour of the soup.  While not essential, it improves the taste of the soup.

If you could only smell this soup.  It smells and tastes very authentic.  Such an easy way to bring a new flavoured soup (almost practically foolproof) that looks homemade!!
