I want the turkey leg!…(no not me)

turkey_legMy family loves my turkey. I think they do because I take my job seriously.  For the past three years, I have researched, studied, read and re-read posts, blogs, websites and any other reference I could locate to make sure my turkey is good.  I start with a fresh, free range, locally raised, organic bird, brine it overnight, baste it with butter, cook on high heat then low heat, to sear in the moisture.  It is quite simple.  My son loves to hold the big turkey leg in his hand and take big, manly, meat eater-like bites.  And really, he’s eating with his hands which are likely a big part of the appeal.  I remember how much I loved having turkey as a child.  While I no longer have any desire to eat it, I am quite proud that I’ve been able to provide similar memories for my family.  Now, what to do with all the leftover turkey?
