My favourite Greek beans

I love beans, all kinds of beans. But my favourite ones are slow simmered in sauce. This recipe provides an amazing satisfying dish that has wonderful flavours, and will always work to transport me to the island of Santorini, where I fell in love with them at a beach-side tavern.

Like all bean recipes, you need to soak them first and then cook them. But really it`s worth all the effort. And as I’ve mentioned in a previous post you should always make extra and freeze. Beans freeze very well. I prefer to cook my own from dried because I think they taste much better. Butterfly canned beans are also quite good.

Once beans have been soaked, you need to cook them for at least 45 minutes, until tender, but not completely cooked.

Next, you need to saute 1 to 2 medium onions in olive oil, then for final minute add in three cloves of garlic.

Next, mix in crushed tomatoes, chopped parsley and some salt and stir cooking

You then add the cooked beans and stir until mixed

Finally, cook in oven at 400 for approximately 50 minutes.

This recipe is so easy, and you can eat the beans warm or at room temperature. They can be a side or a light main with aside salad. No matter what, you will love this recipe!
