Perfect vacation lunch

I love to travel for vacation. Getting away from your usual routine,
seeing different things and trying new things are all of the benefits
we can enjoy.

This summer we were in Vermont for my husband’s school reunion. During
our drive beautiful state we had the pleasure of exploring
the small towns along the way. One of our stops was at a small
organic co-op bakery – my dream pit stop. There we found some local
cheeses, an impossibly filled olive loaf, the most incredible pizza,
cookies (made with dates and oats and cranberries)
and the most beautiful beet and goat cheese tart.
 
My husband and son hate beets. But it was so appealing I got both of
them to agree to a bite. My kid made a face but my husband actually
thought it wasn’t too bad – High praise coming from him. The two of
them happily tore off pieces of the bread and nibbled bits of
cheese. The pizza, with buffalo cheese basil and chunks of fresh
tomato sauce was the most heavenly of all. It wasn’t a traditional
heavy crust. It was unbelievably light and cheesy and really
amazing. My son loved it so much that he said we should take this
pizza and give it to warring nations because if they could taste such
a great pizza they wouldn’t want to fight anymore. Incredible how
truly insightful that statement truly was.
